Frango de Fricassé/Chicken Fricassee



Mais um pratinho que lembra a casa e as boas refeições em família. Frango de Fricassé foi sempre dos meus pratos favoritos e sempre o comi em vez do frango de caril que a minha mãe fazia! (Pois é, não sou grande fã de caril...). Não ficando exactamente igual ao prato da mãe, este frango de fricassé não deixa nada a desejar, acomoda o estomâgo e a alma depois de um dia (ou noite) de trabalho.

Another dish the reminds me of home and the good and long meals around the family. Chicken fricassee was always one of my favourite dishes as I always ate it instead of the chicken curry my mum used to make! (Yeah... I'm not a big fan of curry...). Not exactly the same as my mum's version, this chicken fricassee is really tasty and makes you feel comfy and home after a day (or night) at work.

Frango de Fricassé

Neste prato utilizei salsa picada seca o que conferiu a cor verde para o molho, mas o melhor é mesmo salsa fresquinha e cortada na hora.

Receita (para 2):


  • 1 cebola grande;
  • 2 dentes de alho;
  • 10g de Flora lighter than light;
  • 200g de frango em pedaços;
  • 1/2 cubo Knorr de Galinha;
  • 200ml de água;
  • 10g de farinha integral;
  • 1 cl sopa cheia de sumo de limão;
  • 1 cl sopa de salsa picada;
  • 250g de arroz cozido (aconselho Basmati integral);
  • sal, pimenta a gosto.

Preparação:
No copo da bimby colocam-se a cebola, os dentes de alho e a margarina e tritura-se 5s/vel 5. Refoga-se 5min/Varoma/vel 1. Ao fim deste tempo coloca-se a borboleta, a água, o caldo e a carne cortada em pedaços. Guisa-se durante 10min/Varoma/inverso/vel colher.

Depois deste tempo mexe-se com a espátula e tempera-se a gosto com o sal e pimenta. Volta-se a guisar durante mais 10min/Varoma/inverso/vel colher. Retira-se a carne e reserva-se juntamente com o arroz.

Junta-se o sumo de limão e a farinha ao molho e tritura-se 5s/vel 7. Coloca-se a salsa picada e deixa-se o molho engrossar 3min/100º/vel 1.

Cobre-se a carne e o arroz com o molho e serve-se.

Chicken Fricassee

For this dish I used dried chopped parsley which made the sauce look greenish. I definitely recomend the use of fresh parsley though, chopped right on time and doesn't leave that strong a colour.

Recipe (for 2):


  • 1 big onion;
  • 2 garlic cloves;
  • 10g Flora lighter than light;
  • 200g diced chicken;
  • 1/2 Chicken stock cube;
  • 200ml water;
  • 10g de wholemeal flour;
  • 1 tbsp lemon juice;
  • 1 tbsp chopped parsley;
  • 250g cooked rice (I used Tilda's already cooked brown rice - I was on a rush!);
  • salt and pepper to taste.

Instructions:
In the thermomix bowl put the onion, garlic cloves and the margerine and chop 5s/vel 5. Then press 5min/Varoma/vel 1. After this put the butterfly in and then pour the water, the stock cube and the diced chicken. Stew for 10min/Varoma/inverse/vel spoon.

After this time just mix together with the spatula and season it to taste. Stew again for more 10min/Varoma/inverse/vel spoon. Put aside the meat.

Pour the lemon juice and flour to make the sauce and chop 5s/vel 7. Put the parsley in and let it cook for 3min/100º/vel 1 so it gets thicker.

Pour the sauce over the meat and rice and eat.
